Motai Workshop (Doburoku)
Doburoku made from homemade rice and groundwater at Motai.
In 2008, Yamato-cho of Gujo was designated as a Doburoku Special Zone of Kokindenju-no-sato Yamato Special Food and Cultural Regeneration Zone, and manufacturing doburoku even in small quantities is permitted. A Tofu and Yuba dish restaurant "Oku-no-Oku" (Motai Workshop) started making the first Doburoku. Our Doburoku is made from Gujo's clear water, local rice and Koji, with the name of Oku-no-Oku. Our Doburoku has a rich taste and a refreshing flavor that makes you feel refreshing. Please enjoy the new taste of Gujo Yamato.

The secret of red and white
Doburoku (Red) is pink in color with red Koji. It tastes sweeter while the while one is spicy. Please get both colors if you are celebrating.
